My last recovery was 8:51pm. I am very active on my PC all day and if it crashes near the end of the day I know I can get all files back from 8:51pm the previous day but what about everything I added that day?

Keep in mind that the Recovery Point is a collection of information required to restore the full system to that point in time. Additionally, files that changed or were created get backed up throughout the day.

If you were to restore to 8:51pm yesterday, the files that are more recent are still available in the "My Rebit" interface. You would be able to selectively copy those items to the computer once it is running again.
