In browsing my Rebit backup I can see how to restore a file to a previously stored version by right clicking it. But when I tried to do this with a directory I wasn't provided with the same options. Is there a way to restore all of the contents in a given directory to the contents as they were at a certain point in time without selecting the files one at a time?

Unfortunately restoring an entire directory from a set date is not possible at this time. You can restore entire folders, but it will not be possible to do this to a specific date without using the recovery CD.
